PICKLED EDIBLE BULBS
These edible bulbs are collected in the wild. In Greek it's called βολβοί, Βροβιούς Volví, Vrovioús. A rare, "luxury" and great gastronomic experience, a real delicacy for the people of Ikaria. These wild onions with a slight bitter taste grow in the woods in the uncultivated soils in the northern part of the island. They come out by hands and hoes, during the ploughing season and are sold as a delicacy. Unlike normal onions, they take 4 to 5 years to reach maturity. The cleaned bulbs are boiled several times, pickled and then kept in wine vinegar and olive oil. Serve chilled on a hors d'oeuvres platter or use as an enhancement to grilled vegetable salad.
Every single jar is handmade, from cooking to bottling and packed with care. There are no added flavoring or additives. All fruits are of limited quantities, are grown locally, and picked at the right time to maintain its flavors.
Keep in cool and dry place. Refrigerate after opening.
