Overnight oats raspberry/honey compote

Description: 

Serve 1 (large portion) or 2 (small portion)

Ingredients: 

½ cup rolled oats

⅓ cup plain Greek yogurt

⅔ cup unsweetened milk of choice

1 tablespoon chia seeds or ground flaxseeds 

Pinch of icaria pure sea crystals® or sea salt

2 tablespoons icaria pure pine tree honey

Raspberry compote (Put 100g raspberries in a pan with 1 tbsp butter and cook gently. Add 3-5 tbsp water if needed, 2 tbsp of icaria pure pine tree honey until almost softened. Turn the heat up and bubble until saucy. You can make this a day before serving.)

Method: 
  1. Whisk together all ingredients in a medium-sized mixing bowl. Spoon into a jar with a tight-fitting lid.
  2. Close and refrigerate for at least 4 hours, but preferably overnight before eating.
  3. In the morning top with 2-3 tbsp of the raspberry compote.
